Being a lean fish, the best way to cook flounder is with wine, sauces and other liquids to help keep them from drying out. Try to avoid sauces or herbs that might overpower the delicate taste of flounder fish. Thicker fillets can be broiled and served with just flavored herb butter.

I was born and raised in Philadelphia and my father and I used to go to the New Jersey shore to fish for flounder. He would then cook it this very easy way and trust me, it's DELICIOUS !!! ... This was so easy and very good! I think it would go nicely with any mild white fish. I'll make this again. Somtimes simple is the best.

Flounder are one of the tastiest fish you'll eat. The two to three pounders are best. Here's my favorite way to cook them. Head, gut and scale the fish. Score to the backbone one way then the other. Liberally coat with Old Bay seasoning and lemon pepper.
