Blanching water can be reused. Add more water if necessary. Remember to always bring water back to a rolling boil before blanching more broccoli.

Blanching crisper, denser vegetables (like broccoli and cauliflower) cuts down on the amount of time they need to be stir-fried. This means they can be added to the stir-fry with less dense vegetables and everything will be cooked at the same time.

I usually also add 1 or 2 teaspoons of cooking oil (palm oil or blended cooking oil) into the boiling water prior to blanching the broccoli or any other leafy green. It makes the greens look really nice!
