Keeping cheese longer can be done by removing the complete outer wrapping as soon as you bring it home from the store. Replace that wrapping with a paper towel. Tightly and completely wrap the entire block of cheese with the paper towel intact and place it in a freezer zip lock bag.

I usually make a year's worth of pesto each summer, frozen it in ice cube trays I've never had a problem with freezing the olive oil or the cheese. Freshly made pesto is the best, but how are you going to keep your pesta plants fresh until next winter?

I ended up cutting my bricks into serving size, and freezing everything I wasn't going to eat within a week. So you can blame it on your hands or your luck, but if the fridge is old, there may be mould!! oh yeah..the chef also said that the best place to store soft cheese is in your stomach!!

I freeze cheese all the time! When you go to thaw just throw it in the fridge for a few days and wa-la good as new. I have tried to freeze heavy cream because I have frozen milk before. It was a mess. I froze it in the carton (not a great idea) When it thawed the carton fell apart.
