A wild cinnamon tree can grow to 65 feet (20 meters) high, but trees used for harvesting are pruned down at about 2 years of age to produce an abundance of finer bark-yielding growth called, tillering. Once the tree reaches 3 years of age it's harvested twice yearly following each rainy season.

Cinnamon is the inner bark of a tropical evergreen tree. There are many different species, between 50 and 250, depending on which botanist you choose to believe. The two main varieties are Cinnamomum cassia and Cinnamomum zeylanicum.

The Cinnamomum zeylanicum, is the source of the cinnamon we commonly buy. This tree grows up to thirty feet tall bearing ovate-lanceolate leaves that are four to seven inches long. However, the panicles of yellowish flowers are often longer than the leaves, and bear pointed black fruits from which oil is extracted.
