The chorizo we get here in Central Texas has a plastic casing that absolutely MUST be removed before cooking. For Chorizo con huevos, I fry the uncased chorizo, drain almost all of the grease, add beaten eggs and a little cilantro.

Chorizo is cooked unlike any of our other sausages. Instead of cooking it in the casing, you should actually cut the casing open and squeeze the contents into a frying pan or griddle to cook them.
