Simmer until tender, 25 to 40 minutes, adding the additional 1/4 cup stock to pan during cooking if necessary.

Stuff into pheasant and place breast down into baking pan. Cover with a couple slices of bacon. Cover and bake at 325 degrees until meat on the legs is easy to pull. Cover during this stage of cooking. Uncover and turn breast up for a few minutes if you wish to have bird browned.

This is a wonderful recipe for those days when you just don't have time to worry about cooking. I often get the ingredients ready the night before and then put it together in the morning. The pheasant can be browned the night before as well.
