Crystallized Ginger Recipe

To make crystalized giner start with fresh gingerroot peel and thinly sliced (about 1lb). Place in heavy saucepan, cover in water and cook until tender. This usually takes about 30 minutes. Drain water and weigh the cooked ginger. This is how much sugar you will need. Return the ginger to the saucepan and add sugar with three tablespoons of water. Bring to boil, stir often, and cook until ginger is transparent and the liquid is evaporated. Reduce heat and continue cooking until almost dry and toss ginger in sugar to coat.
