There are two methods: Dry plucking and wet plucking. Dry plucking is what you think it is — you just start plucking feathers off the bird. Although many people swear by it, I never do this with fresh pheasants because the wet-plucking method works so well.

Re: Dry plucking a turkey? ... Thinking of dry plucking only the beasts & remove from the bird, then skin out the rest of the body. We planned to grind the dark meat anyway and cook down the carcasses for canned turkey stock. There are two birds that I expect to finish at over 30 lbs each.
