Flour is a finely ground powder prepared from grain or other starchy plant foods and used in baking. Although flour can be made from a wide variety of plants, the vast majority is made from wheat.

I totally understand the apprehension at using whole wheat flour in baking recipes. I have definitely made my fair share of dense and dry baked goods. For me, the dense texture isn’t always a problem. In some recipes I actually like it better, it reminds me of the texture of Japanese baked mochi.
