Cover capon loosely with aluminum foil; crimping it to edges of pan. Place in 325 oven. Cook for about 30 minutes per pound. Remove foil 45 minutes before end of roasting time. Brush capon with melted butter and continue roasting until leg joint moves easily.

The bottom line on how long to cook has got to be based on a meat temperature probe (I love my digital!), as this is going to tell you absolutely when its "done" enough to take out of the oven. I'll dispute, to a certain extent, Rainee's previous comment...
