Re: How much Splenda to sweeten 8 oz unsweetened chocolate ... I think I might have found the answer. In the recipe for truffles in DANDR, it uses 8oz unsweetened chocolate and 1 3/4 cup Splenda. I will use a little less and taste test from there.

Add 1/2-1 teaspoon extract (or 1/4 teaspoon Nature's Flavour) to each portion. I've found that lemon and orange work *really* well. Adds negligible amount of carbs. I don't care how pink and girly they want their product to be (I'm not about to turn my nose up at chocolate just because it's targeted toward women), I just want a different crunch in my chocolate. Same reason I don't do Twix - I don't dig the cookie in my chocolate and with Fling I just don't dig the meringue.

WOW! I have a chocolate high after that cake. Thanks for the recipe. ... Also, about the measurements, for interest sake, a tablespoon as refered to in the recipe, is assumed to be 12,5ml. Also, the cocoa is definitely unsweetened cocoa – I think it might be a bit too sweet with sweetened cocoa AND sugar.

COMMENT from MD EADES: Yes, I have indeed written and prepared recipes for truffles using unsweetened baking chocolate plus Splenda instead of sugar, ... And at 3 grams carb per truffle for the real one, it’s not so very bad. I might try using half bittersweet and half unsweetened, plus Splenda to see how that works out.
