Spelt is also higher in B complex vitamins, and both simple and complex carbohydrates. Another important benefit is that some gluten-sensitive people have been able to include spelt-based foods in their diets.

Spelt is the grandfather of wheat...a cousin I guess you could say. I am allergic to wheat, but I can eat spelt...not all celiacs can so it would be trial and error for you. Good luck!
