STEAM-BASTED VARIATION (a lower-fat version of fried eggs) Use just enough butter to grease a 7" to 8" omelet pan or skillet or substitute a light coating of vegetable pan spray and/or a nonstick pan. Over medium-high heat, heat the butter or the coated pan until just hot enough to sizzle a drop of water.

Good point, coolJ. We always referred to basted eggs and sunny side up eggs as the same thing. Want to clarify the difference for me for future reference? ... I agree with the cooks/chefs fellows here. Medium heat, tilt to collect the hot butter and baste. I think that sunny side up eggs is not an easy dish to make.

I suppose we make "basted eggs" all the time but never knew what they were called!!! Fry bacon or sausage. When done, drain most of the grease from the skillet. Break eggs into the still warm or medium-hot skillet (you can just spray pan with Pam without frying meat first).

You'll probably find that many cannot agree on what is a sunny side up egg- purists might say the white needs to be runny near and above the yolk others might say basted eggs (fat or steam basted) are sunny side up I could make more parameters, but you get the idea.
