Grappa's great stuff, but with all of this home distillery discussion I felt it worthwhile to jump in with a comment before anyone tries too much at home alchemy. If you ferment grape stems, seeds, squished out grapes, and whatever else you choose to throw in, the resultant mix contains both ethanol and methanol.

So instead of making Grappa in the garage, I drove my seconds wine to a facility for processing. Because of sanitary laws, Bluey was not allowed entrance. However, you can guess what the secret ingredient is of our "Hair of the Dog" Grappa.

When making grappa from grapes with 40 percent of the juice left in them the flavours, aroma and the quality of the grape are left over for the distilling process. The grapes can be distilled in two ways; 1). Industrial - Usually made with dried must, skins, seeds and stems.

The grapes have almost finished their story in the wine making process either being thrown away or used as fertiliser – but not always, as in some cantinas they will be used as the prime ingredient for grappa making.
