Making vinegar is surprisingly easy. The most important component is patience, because good vinegar takes about two and a half months to develop. To begin, you'll need an earthenware crock with a high-quality plastic or wood spigot, red wine, water and a live starter, often referred to as a mother.

What I've learned mostly is that there's nothing very scientific (or artistic) about making vinegar. Mainly, don't starve your mother, some wine every couple weeks, amount isn't too important, but the bigger the batch, the more I'll add.

I was wanderering if anybody knows where to find info on making red wine vinegar. Sometimes I end up with very small amounts of wine in a bottle and I accumualte in the the fridge for marinates. I now have more than needed and wanted to make my own vinegar.

Question: How do you make vinegar from bottled red wine? ebarenb Answer: Leave it uncorked at room temperature for a while. Air oxidation of the alcohol (ethanol) in the wine will form acetic acid aka vinegar. Be careful with your taste test, though.
