What I've learned mostly is that there's nothing very scientific (or artistic) about making vinegar. Mainly, don't starve your mother, some wine every couple weeks, amount isn't too important, but the bigger the batch, the more I'll add.

Making vinegar from wines is much easier than making beer or wine and the resulting vinegars have a certian crispness that's lacking in ordinary commercial vinegars. It's also a good use for wines and beers that don't turn out quite right.

Can anyone give instructions on making red wine vinegar? Does one need "mother of vinegar" to do this successfully? Any help would be greatly apprecia ... I tried making wine vinegar a while ago and it never "caught" the proper wild yeast. It hung around looking sad, then simply rotted. Would outside be better than inside?

Red wine vinegar is really easy to make at home. All you need is some leftover red wine, some water, red wine vinegar mother, and a few tools. You can look for red wine vinegar at your local homebrewing shop, but mine was out, so I ordered it online.
