Do you start with cold water or plunk the meat into already-boiling water? Salt or not? After skimming the froth & foam, cover or not? I know to simmer, not hard-boil, but that's all I'm sure of...

I think my little brother is nuts! He says you must parboil spare ribs before you roast or grill them. Is he kidding? I never heard of this before. I will admit his spare ribs always are fantastic, but, if you parboil them, won't they turn tough? ... One is to keep the grill stoked and barbecue the meat for hours.

The purpose of the parboil is to get the meat cooked through the center, thoroughly. That is very important with pork. Once the meat is cooked, not past the point of being done, it is usually put on a BarBQ grill.

Don't parboil them--you are just extracting all the meat juices by boiling it out of them. To shorten cooking time, I wrap in foil and bake at 250* for an hour or two. The key to tender ribs is low and slow heat, no matter how you do it.
