That is red-eye gravy, which you pour over the ham and serve. The name “red-eye gravy” (sometimes referred to as “red-ham gravy”) derives from the fact that a circle or oval of liquid fat with a slightly reddish cast will form on the surface of the gravy when it is reduced.

Red eye gravy is well known in the South, but little known in the rest of the United States. The gravy is also called bird-eye gravy, poor man's gravy, red ham gravy, and muddy gravy. These hams are very salty and the gravy, made from drippings and black coffee, packs a punch.

I call it gravy, as in meatballs and gravy. I rarely call it red gravy, except when talking to people who are inclined to call it sauce. When I say gravy, I mean the red stuff, with meatballs, sausages and pork bracciole.
