Roasting a Pig

To roast the pig you should first determine the number of people that will be eating. Allow for 1 1/2 pounds per person. Fill the body with the stuffing (it must be quite full) and then sew it up, or tie it round with a buttered twine. Put the pig on the spit, and place it before a brisk fire, but not too near so it doesn't scorch. The fire should be largest at the ends, so the middle of the pig doesn't get done before the ends. As you're cooking, rub it frequently with fresh butter tied in a rag. A good sized pig will require at least three hours' roasting.

Note that when you are spit-roasting a pig, very often the cracking can be done to perfection while the rest of the meat requires further cooking. Simply remove the cracking and serve it as a snack, or keep it on one side and reheat it just before serving with the rest of the pork.
