Substitute for Evaporated Milk

Evaporated milk is nothing but a concentrated form of milk that is used in recipes to add richness. There are a few substitutes for evaporated milk. One way to do this is to make your own evaporated milk. Measure 2/3 cup of non-fat dry milk and 3/4 cup of water and mix together. If you do not have dry milk on hand, you could try using sour cream instead. The downside to using sour cream is that it may make your dish a little too rich. One other substitute for evaporated milk is to use sweetened condensed milk and do not use any sugar for the rest of the recipe.

I have started a dish for dinner and have discovered I don't have evaporated milk. I live 30 minutes away from town and have no close neighbors. I am making a chile rellenos bake in the oven and it calls for evaporated milk for the batter of eggs and flour.

Not really. Our sources for substitution ideas recommend using light cream or half and half when you don’t have evaporated milk on hand — but that doesn’t sound like the direction that you want to head in.

If need be, very cold whole evaporated milk can be whipped, but it will collapse quickly. Whip just prior to serving and don't expect to store any leftovers. The natural lactose sugar is concentrated in evaporated milk, so you may need to reduce the sugar when using it as a fresh milk substitute in recipes.
