That's where flap meat comes in. Also called flap steak, the unflatteringly named cut is similar to skirt and flank in that it comes from the less tender regions of the animal. Often cheaper than more popular cuts, this little underdog of the beef world has a wonderful meaty flavor and fine texture when prepared carefully.

I saw a package of "flap meat" at Sam's Club yesterday. I've never seen anything labeled "onglet", so I'm not sure what that's supposed to look like. What I saw (and have purchased in the past) is marbled strips of beef, about 1"x1-1/2"x8", slightly wider at one end than the other.

The San Francisco Chronicle sings the pleasures of another obscure cut of beef: "flap meat". Given how much I love flank, skirt, and hanger steaks, I'll keep an eye out for this one. My mother's old cookbooks refer to flank steak as a cheap entree.
