Go World Travel Magazine has an article on Italian convent accommodations (which I found via Gadling Convents in Italy a long time ago) that first exposed me to this idea of staying in convents, and it seems like a very viable option for budget travelers not interested in hostels.

Unfortunately, it’s a bit tougher to locate the Italy monasteries and convents that welcome travelers than you might think - they are, after all, houses of worship first and only provide accommodation as a second priority (if that).
