I'm not sure the "pullet egg" is any tastier than a big cone-head egg from a two-year-old hen, but it seems too special to crack, and it can't be packaged for sale alongside larger eggs.

We always get excited when the laying chicks we bought in the spring become mature enough to lay their first egg. This year especially, since the older hens are laying eggs few and far between. A reader, Lori, asked what is a pullet egg, a term I used in a previous blog posting here.

Producers should order sexed pullet chicks when purchasing egg-production strains. Males are not needed in an egg production flock unless fertile eggs are wanted for hatching. The males eat feed and take up space that could be used by hens.
