The sacs release pollen on to the outside of the anthers that brush against insects on entering the flowers. The pollen once deposited on the insect is transferred to the stigma of another flower or the same flower.

The stamens (within the mauve area in the photo) developed prior to the appearance of the stigma. Anthers matured and began to release copious yellow pollen. To conserve pollen until the stigma were receptive the pollen sacs were incised with a razor and pollen in good supply was shaken out into a petri dish.
