Speaking of wiring, use fairly heavy wire to wire up your ammeter. Use 14-gauge stranded copper wire. The ammeter is going to be somewhat far from the battery. Its wiring will therefore be long, and extra thickness will prevent the wiring from absorbing too much energy and causing voltage drops.

No problem with wiring in the voltmeter but I am stuck over how to wire in the milli-volt meter in a way that it can be used to measure amps in my 12 volt circuit. I understood it ... It is not immediately obvious to me which other of their products can be used for my purposes. (None has the name "digital ammeter").

Without them, you will actually max out one regulator first and then the other will start to kick in. That is unprofessional engineering. When you take diodes out, it will work but TRY putting an ammeter on the input and see how much more current gets wasted by heat because of the weaker regulator.
