Leaving the bulbs in the ground too long will weaken or burst the skins, which are critical to preserving the heads. If the scapes are left on the garlic plant, they develop bulbils, the seed stock from which heads of garlic will develop after two years if planted.

The kimchi tastes fine, even if it's not as good as eating freshly cooked garlic-scapes, and it's certainly a good way to preserve them.

Now that I know about garlic scapes, I wait for them eagerly every summer, and snatch them up gleefully, and cook and eat them until we are all tired of them–just like I do with asparagus. Recipes: Canning and Preserving (rss) (7)

Now, you’re probably asking: What the eff is a garlic scape? This, If you’re more of the preserving type, these would make a marvelous pickle, and can also be diced fine and used to make compound butter. Since I’m more of the impulsive, want-to-eat-this-now type, I opted to turn the scapes into a pesto.

Rich Hannan, of the USDA's Western Region Plant Introduction Station at WSU, first shared with us the idea of using garlic scapes for pesto. Rich is in charge of storing and saving seeds or all kinds of crop varieties to maintain biodiversity.
