Do you brine? Baste? Roast at high heat? Share your turkey tips! I've never brined a turkey and don't plan to do it this year. But I've heard that with a local (ten miles away), sustainably-raised, heritage turkey, brining isn't necessary. If brining is about flavor, I'm hoping my bird is already packing.
