We humans can eat darned near anything. Eating leeches is certainly no worse than any number of things that are inexplicably considered delicacies worldwide. They would be a reasonably good source of protein. Not much else though - not much in the way of fat reserves, or whole-grain fibre, or carotenoids or anything.
