If we look at the Catholic "Vesper Service" (or Evening Prayer), there is relatively little organ music required. The service, even if it's planned with a lot of music, is mostly psalms and canticles (read or sung), which may or may not be accompanied.

A friend local friend of ours asked me if I'd be interested in attending the Vesper Service at Notre Dame. I jumped at the opportunity and said, "YES"! It performs on Sundays in the late afternoon at 5:45pm and runs about a half hour. As someone who is not Catholic, I relished this rare opportunity. I would recommend it...
