Could you please tell me what a "brisket" refers to? Is it a particular cut of meat or is it a meat that has been cured in some fashion first? ... Because it is a tough piece of meat, brisket requires long, slow cooking to break down the connective tissue that makes it tough. The flavor makes it worth the wait.
